1 cup unsalted butter
¾ cup brown sugar
¼ cup granulated sugar
¼ cup maple syrup
1 large egg
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon vanilla extract
Brown the butter in a medium saucepan over medium heat until nutty aroma and light golden color is achieved. Let it cool slightly.
Mix brown sugar, granulated sugar, and maple syrup in a mixing bowl. Pour in the browned butter and mix until well combined.
Add the egg and vanilla extract to the sugar mixture and mix until smooth.
In another bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture until just combined.
Chill the dough in the refrigerator for at least 30 minutes.
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
Use a cookie scoop to drop balls of dough onto the prepared sheets, leaving space between each cookie. Bake for 10-12 minutes until edges are lightly golden.
Cool the cookies on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
