  • 1 tablespoon creole seasoning

  • In a large pot, heat olive oil over medium heat. Add chopped onion and cook until translucent, about 5 minutes. Stir in minced garlic and cook for another minute.
  • Stir the diced sweet potatoes and corn into the pot. Cook for 5 more minutes.
  • Pour in the vegetable broth, raise the heat to bring it to a boil, then reduce to a gentle simmer and cover. Cook for about 15-20 minutes, or until the sweet potatoes are tender.
  • Use an immersion blender to puree the soup to your desired consistency. Alternatively, carefully transfer to a blender in batches, blending until smooth.
  • Pour in the coconut milk and stir well to combine. Return to heat for about 5 minutes until warmed through.
