1 lb ground beef
1 medium onion, diced
2 cloves garlic, minced
2 medium potatoes, diced
4 cups beef broth
2 cups milk
1.5 cups shredded cheddar cheese
Salt and pepper to taste
In a large pot over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
Add the diced onion and minced garlic to the pot, cooking until the onion is translucent, about 3-5 minutes.
Stir in the diced potatoes and beef broth. Bring to a boil, then reduce heat to low. Cover and simmer for 15-20 minutes, or until potatoes are tender.
Once the potatoes are cooked, stir in the milk gradually, allowing it to mix well. Let it heat through but do not let it boil.
Mix in the shredded cheddar cheese, stirring until melted and creamy. Season with salt and pepper to taste.
Remove from heat and let it sit for a few minutes before serving. This helps the flavors to meld beautifully.
