Creamy Chicken Pesto Pasta

  • 2 cups gluten-free bowtie (farfalle) pasta
  • 2 cups cooked chicken breast, shredded or diced
  • 1 cup heavy cream
  • 1/2 cup basil pesto
  • 1/4 cup grated Parmesan cheese (plus more for garnish)
  • 1 cup cherry tomatoes, halved
  • 1 tablespoon olive oil
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Bring a large pot of salted water to a boil, add the gluten-free bowtie pasta, and cook according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat, add cooked chicken and sauté for about 2 minutes, sprinkling garlic powder over the chicken.
  3. Lower the heat and pour in the heavy cream, stirring until it starts to simmer. Add the basil pesto and cook together for about 2-3 minutes.
  4. Add the cooked pasta to the skillet, mixing until evenly coated in the creamy pesto sauce. Fold in the halved cherry tomatoes.
  5. Season with salt and pepper, sprinkle with grated Parmesan cheese, and garnish with fresh basil leaves before serving warm.

Notes

For a lighter sauce, reduce the heavy cream or use half-and-half. You can add vegetables like spinach or broccoli for added nutrition.
