1 lb Ground Beef
1 Onion, chopped
2 Potatoes, diced
1 cup Carrots, sliced
4 cups Beef Broth
2 cups Cheddar Cheese, shredded
1 cup Heavy Cream
Brown the Meat: In a skillet over medium heat, brown the ground beef, breaking it apart as it cooks until it’s no longer pink. Drain any excess fat.
Add to Crock Pot: Transfer the cooked meat to your slow cooker. Add the chopped onion, diced potatoes, sliced carrots, and any additional vegetables you prefer.
Pour in Broth: Add the beef broth, stirring well to combine all ingredients. Season with salt, pepper, and any other desired spices.
Set it and Forget it: Cover and cook on low for 6-8 hours or high for 4-5 hours until the vegetables are tender.
Add Dairy: About 30 minutes before serving, stir in heavy cream and shredded cheese. Allow it to melt and thicken the soup.
Serve: Garnish with optional toppings like bacon, green onions, or croutons before enjoying!
