1 lb Ground Beef (or Turkey)
1 Can Black Beans, rinsed
1 Can Diced Tomatoes
1 Cup Corn (frozen or canned)
1 Packet Taco Seasoning
4 Cups Beef or Chicken Broth
Salt & Pepper to taste
Optional Toppings: Sour Cream, Avocado, Cheese, Tortilla Chips, Fresh Cilantro
Brown the Meat: In a large pot or Dutch oven, add your ground beef or turkey over medium-high heat. Cook until browned and fully cooked, breaking it down with a spatula, for about 5-7 minutes.
Add Ingredients: Add diced tomatoes (with juices), black beans, corn, taco seasoning, and broth to the pot. Stir everything together to combine.
Bring to a Boil: Increase the heat and bring the mixture to a rapid boil. Once boiling, reduce the heat to low.
Simmer: Allow the soup to simmer uncovered for 20-30 minutes. This will let the flavors meld together beautifully. Stir occasionally and taste, adjusting seasoning as necessary.
