1 pound ground beef (or ground turkey, chicken, or plant-based meat)
1 onion, diced (or shallots or leeks)
2 cloves garlic, minced (or garlic powder, 1/2 tsp)
1 can (14.5 oz) diced tomatoes (or crushed tomatoes or fresh tomatoes, diced)
4 cups beef broth (or vegetable broth or chicken broth)
2 cups uncooked pasta (or gluten-free pasta or quinoa)
1 cup shredded cheddar cheese (or Monterey Jack or dairy-free cheese)
Salt and pepper to taste (or seasoning blend or hot sauce)
In a large pot over medium heat, add the ground beef and cook until browned. Break it apart with a spoon, and season with salt and pepper.
Stir in the diced onion and minced garlic. Cook for about 3-4 more minutes until the onion is translucent.
Pour in the diced tomatoes (with juice), and stir to combine. Allow the mixture to simmer for about 5 minutes.
