1 lb chicken breast (boneless, skinless)
1 cup quinoa (rinsed)
4 cups chicken broth
1 cup carrots (diced)
1 cup celery (diced)
1 onion (diced)
2 cloves garlic (minced)
Salt and pepper to taste
Fresh parsley or cilantro (for garnish)
In a large pot, heat a drizzle of olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are looking soft and fragrant.
Add in the minced garlic – cook for an additional minute until fragrant.
Introduce the chicken broth to the pot, stirring well. Add in the rinsed quinoa and season with salt and pepper.
Bring everything to a gentle boil, then reduce the heat to low and cover the pot. Let this simmer for around 15-20 minutes.
While the soup is simmering, check your chicken. If using raw chicken breast, ensure it is fully cooked through (about 15-20 minutes). Remove it, shred it and stir it back into the soup for the last few minutes.
Once the quinoa is cooked and the soup has thickened, taste and adjust seasoning as needed. Add chopped parsley or cilantro just before serving.
