1 lb chicken sausage
4 cups chicken broth (low sodium)
2 cups chopped mixed vegetables (carrots, celery, bell pepper)
1 can diced tomatoes
1 cup spinach or kale
1 tsp dried oregano
Salt and pepper to taste
Prepare the Ingredients: Begin by chopping your chicken sausage and vegetables. Having everything prepped and ready to go will make the cooking process smoother.
Sauté the Sausage: In a large pot, over medium heat, add a splash of olive oil and cook the chicken sausage until it’s browned, approximately 5-7 minutes.
Add the Vegetables: Add the chopped mixed vegetables to the pot, stirring them in for about 3-4 minutes until they begin to soften.
Incorporate Liquid: Slowly pour in the chicken broth and add the can of diced tomatoes, including the juices. Bring to a gentle simmer.
Season It Up: Add the dried oregano, salt, and pepper. Taste and adjust seasonings to your liking.
Finish with Greens: Just before serving, stir in the spinach or kale and let it wilt for a couple of minutes.
