1 pound boneless, skinless chicken breasts
1 cup wild rice
1 medium onion, diced
2 carrots, sliced
2 celery stalks, diced
4 cups chicken broth
1 teaspoon dried thyme
1 cup milk or heavy cream
Salt and pepper, to taste
Place your chicken breasts at the bottom of the crockpot. Season them with salt and pepper.
Pour the wild rice over the chicken, ensuring it’s evenly distributed.
Dice the onion, carrots, and celery. Add them to the crockpot with the thyme.
Carefully add the chicken broth, ensuring that all ingredients are submerged.
Set your crockpot on low for 6-8 hours or high for 3-4 hours. The chicken should be fully cooked and tender.
Once cooked, remove the chicken from the pot. Shred it using two forks and return it to the soup.
Stir in the milk or cream until well combined. Allow it to warm through.
Before serving, taste the soup and adjust seasonings as necessary.
Ladle the soup into bowls and enjoy hot!
