  • 2 tbsp olive oil

  • In a large pot, heat the olive oil over medium heat.
  • Add diced carrots, celery, and peas. Sauté for about 5-7 minutes until the vegetables start to soften.
  • Stir in the shredded cooked chicken and thyme. Cook for an additional 2 minutes to heat the chicken through.
  • Pour in the chicken broth and bring the mixture to a gentle boil. Reduce the heat and allow it to simmer for about 10 minutes.
