Prepare the Ingredients: Begin by chopping the sausage into bite-sized pieces and dicing your vegetables (potatoes, carrots, onions, and celery).
Cook the Sausage: In a large pot over medium heat, add the sausage. Cook until browned and cooked through, about 5-7 minutes. Remove the sausage and set aside, leaving the drippings in the pot.
Sauté the Vegetables: In the same pot, add the onions and garlic. Sauté until the onions are translucent, about 3-4 minutes. Add the carrots and celery, cooking for another 2-3 minutes.
Add Potatoes and Broth: Stir in the diced potatoes, cooked sausage, and your choice of broth. Bring the mixture to a boil, then reduce heat to a simmer.
Season: Add salt, pepper, and Italian seasoning (or your choice of spices) to taste. Simmer for 25-30 minutes, or until the potatoes are tender.
Incorporate Spinach: In the last 5 minutes of cooking, stir in the spinach until wilted.
Serve: Taste and adjust seasonings if needed. Ladle the soup into bowls and enjoy with crusty bread or crackers!
