Easy One-Pot Wild Rice Soup

  • 1 cup wild rice
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup chickpeas or diced chicken (optional)

  • Heat the oil in a large pot over medium heat. Add the diced onions and sauté for 3-5 minutes until translucent.
  • Stir in the carrots and celery, and cook for an additional 5 minutes until they soften slightly.
  • Pour in the wild rice and stir everything together for 1 minute to toast the rice.
  • Add the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for 40-45 minutes until the wild rice is tender.
  • Add thyme, salt, and pepper (and chickpeas or chicken if using). Stir and simmer for an additional 5-10 minutes.
  • Taste and adjust the seasonings if necessary, then serve warm with bread or crackers.
