1 cup pumpkin puree

Preheat the oven: Set your oven to 350°F (175°C) and grease a 9-inch round or square baking pan.
Mix wet ingredients: In a large mixing bowl, combine the pumpkin puree, melted butter, sugar, yogurt, and eggs. Whisk until smooth.
Combine dry ingredients: In another bowl, whisk together the flour, baking powder, cinnamon, and salt.
Combine wet and dry ingredients: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing.
Prepare streusel: In a small bowl, mix the topping ingredients until crumbly.
Layer in the pan: Pour half of the batter into your greased pan, sprinkle half of the streusel topping, then add the remaining batter followed by the rest of the streusel.
Bake: Place in the oven and bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
Cool: Allow to cool for about 10 minutes before transferring to a wire rack.
Serve: Slice and enjoy with a cup of coffee or tea.
