Fruity Pebbles Cookies

An exciting twist on the classic cookie, combining Fruity Pebbles cereal and white chocolate chips for a colorful and flavorful treat.

  • 2 1/2 cups all-purpose flour
  • 1 tablespoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 2 tablespoons vanilla extract
  • 1 1/2 cups Fruity Pebbles cereal
  • 1 cup white chocolate chips
  • 1/2 cup rainbow sprinkles (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line two baking sheets with parchment paper.
  3. Cream together the softened butter, granulated sugar, and brown sugar until creamy.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  6. Gradually mix the dry ingredients into the wet ingredients until just combined.
  7. Fold in the Fruity Pebbles, white chocolate chips, and rainbow sprinkles.
  8. Use a cookie scoop to drop mounds of dough onto the prepared baking sheets, spacing them 2 inches apart.
  9. Bake for 10-12 minutes or until the edges are lightly golden.
  10. Let the cookies cool on the sheets for 5 minutes before transferring to a wire rack.

Notes

Serve warm or at room temperature, ideally with milk. Store in an airtight container to keep fresh.
