Healthy Cabbage Soup

A nourishing and delightful dish packed with nutrients from fresh vegetables, perfect for warming up or as a light meal.

  • 1 medium head of cabbage, chopped
  • 2 carrots, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Set your Instant Pot to the sauté mode. Add the olive oil along with the chopped onions and minced garlic. Cook until fragrant and the onions are translucent, about 2 to 3 minutes.
  2. Add the diced carrots and chopped cabbage to the pot. Sauté for about 5 minutes to soften the vegetables.
  3. Pour in the vegetable broth and the can of diced tomatoes, stirring to combine all the ingredients.
  4. Add in the dried thyme, salt, and pepper. Stir well to ensure everything is mixed thoroughly.
  5. Close the lid of the Instant Pot and set it to high pressure, cooking for 10 minutes.
  6. Once the cooking time is complete, let the pressure release naturally for 5 minutes. After that, release any remaining pressure quickly before opening the lid.
  7. Ladle the soup into bowls and enjoy hot.

Notes

Store leftovers in the refrigerator for up to 4-5 days or freeze for up to 3 months.
