  • 1 lb Ground Turkey
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 3 cups Mixed Vegetables (carrots, celery, bell peppers, etc.)
  • 6 cups Low-Sodium Chicken or Vegetable Broth
  • 1 tsp Italian seasoning
  • Salt and Pepper to taste
  • 2 tbsp Olive Oil
  • Instructions

  • In a large pot, heat olive oil over medium heat. Add diced onions and sauté until translucent, about 5 minutes.
  • Add minced garlic and cook for an additional minute until fragrant.
  • Add the ground turkey to the pot, breaking it apart with a spatula. Cook until browned, about 7-10 minutes.
  • Once the turkey is cooked, stir in the mixed vegetables and sauté for another 5 minutes.
  • Pour in the chicken or vegetable broth, and add the Italian seasoning, salt, and pepper. Bring to a simmer.
  • Reduce the heat to low and let the soup simmer for 15-20 minutes, allowing the flavors to meld.
  • Taste and adjust seasoning if necessary. Serve hot, garnished with fresh herbs if desired.
