1 lb Ground Turkey
1 medium Onion, diced
2 cloves Garlic, minced
3 cups Mixed Vegetables (carrots, celery, bell peppers, etc.)
6 cups Low-Sodium Chicken or Vegetable Broth
1 tsp Italian seasoning
Salt and Pepper to taste
2 tbsp Olive Oil
In a large pot, heat olive oil over medium heat. Add diced onions and sauté until translucent, about 5 minutes.
Add minced garlic and cook for an additional minute until fragrant.
Add the ground turkey to the pot, breaking it apart with a spatula. Cook until browned, about 7-10 minutes.
Once the turkey is cooked, stir in the mixed vegetables and sauté for another 5 minutes.
Pour in the chicken or vegetable broth, and add the Italian seasoning, salt, and pepper. Bring to a simmer.
Reduce the heat to low and let the soup simmer for 15-20 minutes, allowing the flavors to meld.
Taste and adjust seasoning if necessary. Serve hot, garnished with fresh herbs if desired.
