Lemon Chicken Salad

A fresh and hearty Lemon Chicken Salad that combines chicken, crisp vegetables, and a zesty lemon dressing for a nutritious meal.

Ingredients

  • 2 tsp lemon zest
  • 2 tbsp lemon juice
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 3 tbsp extra virgin olive oil
  • 1 large garlic clove, minced
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 large chicken breast, halved horizontally, or 2 boneless skinless chicken thighs
  • 1 tbsp extra lemon juice
  • Salt and pepper, to taste
  • ½ tbsp olive oil for cooking
  • 2 tbsp finely chopped dill
  • 8 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 medium avocado, quartered and thickly sliced
  • ½ small red onion, thinly sliced
  • ¾ cup corn kernels
  • 120g/4 oz bacon, cooked and chopped (optional)

Instructions

  1. In a medium bowl, whisk together the lemon zest, lemon juice, honey, Dijon mustard, minced garlic, salt, black pepper, and olive oil until well combined.
  2. Marinate the chicken with half of the dressing for at least 30 minutes.
  3. Cook the marinated chicken in a skillet over medium-high heat with ½ tablespoon of olive oil for about 6-7 minutes per side until fully cooked.
  4. In a large bowl, combine the chopped romaine lettuce, halved cherry tomatoes, sliced avocado, thinly sliced red onion, corn kernels, and finely chopped dill, and toss gently.
  5. Slice the cooked chicken into strips and layer it on top of the salad. Pour the remaining dressing over and toss everything together before serving.

Notes

Customize the salad by adding or removing ingredients based on your preferences. Great for meal prep and quick weeknight dinners.
