1 cup unsalted butter, softened
1 cup packed brown sugar
1/2 cup maple syrup
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 tsp vanilla extract
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
In a large mixing bowl, cream the softened butter and brown sugar until light and fluffy.
Add the maple syrup and vanilla extract to the mixture, continuing to mix until well combined.
In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the wet mixture, mixing just until combined. Do not overmix.
Using a cookie scoop or tablespoons, drop dough onto the prepared baking sheets, spacing them a couple of inches apart.
Bake for 10-12 minutes or until the edges are lightly browned and the centers are set.
Let the cookies cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.
