  • 1 lb Chicken Breast, diced
  • 8 oz Mushrooms, sliced
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 4 cups Chicken Broth
  • 1 cup Heavy Cream (or milk)
  • Salt and Pepper to taste
  • Fresh Thyme (optional)

  • In a large pot, heat a tablespoon of olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook until the chicken is browned and no longer pink, approximately 5-7 minutes. Remove the chicken and set aside.
  • In the same pot, add another tablespoon of oil. Add the diced onion and cook for 2-3 minutes until translucent. Stir in the garlic and mushrooms, cooking for another 5 minutes until mushrooms are softened.
  • Return the cooked chicken to the pot. Pour in the chicken broth and bring to a gentle simmer. Allow it to cook for about 15 minutes, letting the flavors meld.
  • Lower the heat and stir in the cream (or milk alternative). Adjust seasoning with salt and pepper. If using fresh thyme, add it now and let it simmer for an additional 5 minutes.
  • Ladle the soup into bowls and garnish with additional fresh herbs if desired.
