1 lb Ground Beef or Turkey (or Black beans, lentils, or tofu for vegetarian option)
1 medium Onion, diced (or Shallots or leeks)
1–2 Bell Peppers, diced (or Zucchini or carrots)
14.5 oz Canned Diced Tomatoes (or Fresh tomatoes or tomato sauce)
15 oz Black Beans, drained and rinsed (or Kidney beans or pinto beans)
1 cup Corn (frozen or canned; or Quinoa or additional beans)
2–3 tbsp Taco Seasoning (or Homemade taco seasoning blend)
3 cups Chicken or Vegetable Broth (or Water or homemade broth)
Optional Shredded Cheese for topping (or Vegan cheese or avocado)
Optional Sour Cream or Greek Yogurt for topping (or Guacamole or dairy-free yogurt)
Brown the meat in a large pot or Dutch oven over medium heat until cooked through. Drain any excess fat.
Stir in the diced onion and bell peppers. Cook for about 3-5 minutes until softened.
Add in the diced tomatoes, black beans, corn, and taco seasoning. Stir everything together.
Add the chicken or vegetable broth and stir until combined. Bring to a boil, then reduce the heat and let it simmer for about 10-15 minutes.
Taste and adjust seasoning to your liking. Add more taco seasoning or hot sauce if desired.
Ladle soup into bowls and top with shredded cheese, sour cream, diced avocado, or fresh cilantro, if desired.
