  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 cup fresh basil leaves
  • 1 cup vegetable broth or chicken broth

  • Canned tomatoes (28 oz can) as substitution
  • Shallots or leeks as substitution

  • Preheat the Oven: Set your oven to 400°F (200°C).
  • Prep the Tomatoes: Wash and cut the tomatoes in half. Place them cut-side up on a baking sheet lined with parchment paper and drizzle with olive oil. Season with salt and pepper.
  • Roast the Tomatoes: Roast the tomatoes in the preheated oven for about 25-30 minutes or until they are caramelized and tender.
  • Cook the Aromatics: In a large pot, heat a tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and sauté for an additional 1-2 minutes until fragrant.
  • Add the Roasted Tomatoes: Once the tomatoes are done roasting, add them along with any juices from the baking sheet to the pot. Stir well.
  • Mix in Broth and Basil: Pour in the vegetable broth and add the fresh basil. Bring the mixture to a simmer, cooking for about 10-15 minutes.
  • Blend the Soup: Use an immersion blender to puree the soup until smooth. You can also transfer portions to a blender, making sure to leave the lid slightly ajar for steam to escape.
  • Season and Serve: Taste and adjust seasoning with additional salt and pepper as desired. Serve hot with a drizzle of olive oil and a garnish of fresh basil.
