2 lbs fresh ripe tomatoes
1 medium onion, chopped
4 cloves garlic, minced
1 cup fresh basil leaves
1 cup vegetable broth or chicken broth
Salt and pepper to taste
Olive oil for drizzling
Canned tomatoes (28 oz can) as substitution
Shallots or leeks as substitution
Garlic powder (1 tsp) as substitution
1 tbsp dried basil as substitution

Preheat the Oven: Set your oven to 400°F (200°C).
Prep the Tomatoes: Wash and cut the tomatoes in half. Place them cut-side up on a baking sheet lined with parchment paper and drizzle with olive oil. Season with salt and pepper.
