1 cup Pumpkin Puree
1 ½ cups All-Purpose Flour
¾ cup Sugar
2 large Eggs
½ cup Oil
1 cup Chocolate Chips
1 tsp Baking Powder
1 tsp Spices (cinnamon, nutmeg)
Preheat your oven to 350°F (175°C) and line a muffin tin with liners or grease it lightly.
In a large bowl, whisk together flour, pumpkin pie spice, baking powder, and salt.
In another bowl, beat eggs, sugar, and oil until well combined. Stir in the pumpkin puree.
Gently fold the wet ingredients into the dry ingredients. Be careful not to overmix.
Fold in the chocolate chips until evenly dispersed.
Spoon the batter into each muffin cup, filling about two-thirds full.
Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Allow the muffins to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.
