Preheat your oven to 350°F (175°C). Grease and flour a bundt pan or a 9×13 inch baking dish.
In a large bowl, combine the pumpkin puree, honey, and any additional liquids (vegetable oil or eggs, if used). Whisk until smooth.
In a separate bowl, whisk together flour, baking powder, cinnamon, and salt.
Gradually add the dry mixture into the wet ingredients, stirring until just combined.
Pour half of the batter into the prepared pan. Sprinkle a layer of cinnamon and sugar mixture before adding the remaining batter on top. Swirl with a knife.
Place in the oven and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Slice, serve, and enjoy! Optionally, drizzle a glaze made of powdered sugar and milk over the top.
