1 can (15 oz) Pumpkin puree
1 cup Brown sugar
2 Eggs
½ cup Milk
1 cup (chopped) Pecans
1 cup All-purpose flour
2 tsp Baking powder
1 tsp each Spices (cinnamon, nutmeg, ginger)
Preheat your oven to 350°F (175°C).
In a medium bowl, whisk together pumpkin puree, brown sugar, eggs, milk, and spices until smooth. Set aside.
In another bowl, combine flour, baking powder, and chopped pecans. Add melted butter (or coconut oil) and stir until crumbly.
Pour the pumpkin mixture into a greased 9×9-inch baking dish. Sprinkle the topping evenly across the pumpkin layer.
Place the baking dish in the oven and bake for 35-40 minutes or until the topping is golden brown.
Let the cobbler cool for about 10 minutes before serving.
