Quinoa and Sweet Potato Bowl

A nutritious and filling bowl featuring fluffy quinoa and roasted sweet potatoes, perfect for healthy eating without sacrificing taste.

  • 1 cup quinoa
  • 2 medium sweet potatoes, peeled and diced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cook the quinoa according to the package instructions. Rinse and simmer in water with a pinch of salt until absorbed, about 15-20 minutes. Fluff with a fork.
  3. In a large bowl, toss diced sweet potatoes with olive oil, paprika, cumin, salt, and pepper.
  4. Spread sweet potatoes on a baking sheet in a single layer and roast for 25-30 minutes until tender and browned, flipping halfway through.
  5. Serve the cooked quinoa topped with roasted sweet potatoes. Add fresh herbs and other toppings as desired.

Notes

Rinse quinoa before cooking to remove bitterness. Adjust seasoning to taste and consider adding toppings like avocado or feta cheese.
