1 pound ground beef
1 onion, diced
2 cups beef broth
1 cup diced potatoes
1 cup shredded cheddar cheese
1 cup milk (or cream)
1 tablespoon ketchup
Salt and pepper to taste
Brown the meat in a skillet over medium heat, breaking it up until fully cooked. Drain excess fat.
Add the diced onion to the skillet and sauté until translucent, about 3-4 minutes.
Transfer the browned meat and sautéed onion to the slow cooker. Add diced potatoes, broth, ketchup, salt, and pepper.
Cover and cook on low for 6-8 hours or on high for 3-4 hours.
About 30 minutes before serving, stir in the milk and cheese.
Taste and adjust seasoning before serving.
Serve hot and garnish with extra cheese or fresh herbs if desired.
