1 pound Italian sausage
4 medium potatoes (cubed)
1 onion (chopped)
4 cups chicken broth
2 cups kale (chopped)
1 cup heavy cream
3 cloves garlic (minced)
Salt and pepper to taste
Brown the sausage in a skillet over medium heat, then transfer to the slow cooker.
Add chopped onion, garlic, and cubed potatoes to the slow cooker.
Pour in the chicken broth and mix gently to combine.
Cover and cook on low for 6-8 hours or high for 3-4 hours, until potatoes are tender.
About 30 minutes before serving, stir in kale and heavy cream.
Season with salt and pepper to taste before serving.
Serve with crusty bread or a fresh salad.
