Line a baking sheet with parchment paper.
In a large mixing bowl, cream together softened butter and brown sugar until light and fluffy, about 2-3 minutes.
Mix in the egg, maple syrup, and vanilla extract until fully combined.
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mix to the wet ingredients, stirring until just combined.
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
Using a cookie scoop, drop dough onto the baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes or until the edges are lightly browned.
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
