Tzatziki Chicken Salad

A fresh and flavorful Tzatziki Chicken Salad made with tender shredded chicken, creamy tzatziki sauce, and fresh veggies, perfect for any meal.

Ingredients

  • 1 medium cucumber, finely grated
  • ¾ cup plain Greek yogurt
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon lemon juice
  • 1 garlic clove, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cooked rotisserie chicken, shredded into bite-sized pieces
  • ½ red onion, diced

Instructions

  1. Prepare the Tzatziki Sauce by mixing the grated cucumber, Greek yogurt, dill, lemon juice, garlic, salt, and pepper until well combined.
  2. Shred the cooked rotisserie chicken into bite-sized pieces.
  3. In a large bowl, mix the shredded chicken and diced red onion together.
  4. Add the tzatziki sauce to the chicken mixture and gently fold everything together until well coated.
  5. Serve immediately, or let it chill in the fridge for at least an hour before serving.

Notes
