  1. Heat olive oil in a skillet over medium heat. Add sliced mushrooms and sauté for 5-7 minutes until golden brown. Add minced garlic and cook for another minute until fragrant. Pour in balsamic vinegar and cook for 2-3 minutes until the liquid reduces slightly. Season with salt and pepper.
  2. Preheat your oven to 400°F (200°C). Place flatbread crusts on a baking sheet. Spread pizza sauce evenly over each crust, leaving a small border around the edges. Sprinkle mozzarella cheese over the sauce, then arrange the sautéed mushrooms evenly across the pizza.
  3. Scatter fresh spinach leaves over the mushrooms, then crumble goat cheese generously over the top. Sprinkle with dried oregano and a final dusting of black pepper.
  4. Bake the pizzas for 10-12 minutes, or until the crust is golden brown and the cheese is melted and bubbly. Remove from oven and let cool for 2-3 minutes before slicing.
