  • 1 cup rolled oats (old-fashioned oats)
  • 1/4 cup honey or maple syrup
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract

  • 1/4 teaspoon baking powder
  • Pinch of salt
  • Optional: 1/4 cup chopped walnuts or chocolate chips

  1. Preheat oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper. Mash the ripe banana in a medium bowl until smooth.
  2. Add honey (or maple syrup), applesauce, and vanilla extract to the mashed banana. Stir until well combined.
  3. In a separate bowl, mix rolled oats, cinnamon, baking powder, and salt. Add optional walnuts or chocolate chips if using.
  4. Add dry ingredients to wet ingredients and mix until just combined. Don't overmix.
  5. Spread mixture evenly into prepared baking pan. Bake for 18-22 minutes until edges are golden brown and center is set.
  6. Allow bars to cool completely in pan before cutting into squares.

Notes

Use very ripe bananas with brown spots for maximum sweetness. For uniform texture, pulse oats in food processor briefly. Store in airtight container for 3 days or freeze for up to 3 months.
