  1. Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper
  2. In a medium bowl, mash banana until smooth. Add almond butter, maple syrup, and vanilla extract, mixing until well combined
  3. In a separate bowl, mix the oats, cinnamon, baking powder, and salt
  4. Gradually add the dry ingredients to the wet mixture, stirring until fully incorporated. If using chocolate chips or nuts, fold them in now
  5. Transfer the batter to your prepared pan, spreading it evenly. Bake for 18-22 minutes until the edges are golden brown
  6. Allow the bars to cool completely before slicing into squares

Notes

Use a very ripe banana with brown spots for natural sweetness and easy mashing. For softer bars, bake for less time; for crispier bars, extend baking by 2-3 minutes. Store in an airtight container for up to 5 days or freeze for longer storage.
