- Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper
- In a medium bowl, mash banana until smooth. Add almond butter, maple syrup, and vanilla extract, mixing until well combined
- In a separate bowl, mix the oats, cinnamon, baking powder, and salt
- Gradually add the dry ingredients to the wet mixture, stirring until fully incorporated. If using chocolate chips or nuts, fold them in now
- Transfer the batter to your prepared pan, spreading it evenly. Bake for 18-22 minutes until the edges are golden brown
- Allow the bars to cool completely before slicing into squares
Notes
Use a very ripe banana with brown spots for natural sweetness and easy mashing. For softer bars, bake for less time; for crispier bars, extend baking by 2-3 minutes. Store in an airtight container for up to 5 days or freeze for longer storage.
