  • 1.5 lbs boneless chicken breast, cubed
  • 2 tbsp Cajun seasoning
  • 1 onion, diced
  • 1 red bell pepper, sliced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Fresh parsley for garnish
  • Salt and pepper to taste

  1. Coat the cubed chicken evenly with Cajun seasoning. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 6-8 minutes. Remove and set aside.
  2. In the same skillet, add the diced onion and bell pepper. Cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Return the chicken to the skillet. Add the uncooked spaghetti noodles and chicken broth. Bring to a boil, then reduce heat to medium-low. This one-pot cooking method allows the pasta to absorb all the flavors as it cooks.
  4. Once the pasta is al dente (about 10-12 minutes), stir in the heavy cream. Add mozzarella and Parmesan cheeses, stirring until melted and creamy.
  5. Season with additional salt and pepper if needed. Garnish with fresh parsley and serve immediately.

Notes

Control the heat by adjusting Cajun seasoning amount. If sauce thickens too much, add splash of chicken broth. Try Monterey Jack or pepper jack cheese for extra heat. Dish reheats beautifully for meal planning.
