  • 12 oz (340g) pasta (spaghetti, linguine, or penne work best)
  • 4 cups diced ripe tomatoes (about 4-5 medium tomatoes)
  • 1/2 cup fresh basil leaves, chopped
  • 3 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • Optional: 1/4 cup toasted pine nuts or walnuts
  • Optional: Red pepper flakes for spice

  1. Bring a large pot of salted water to a boil. Cook your pasta according to package directions until al dente. Reserve 1/2 cup of pasta water before draining.
  2. While the pasta cooks, combine diced tomatoes, chopped basil, minced garlic, olive oil, balsamic vinegar, salt, and pepper in a large bowl. Mix gently to combine, being careful not to crush the tomatoes.
  3. Allow the bruschetta mixture to sit for at least 10 minutes. This resting time allows the flavors to meld together beautifully, creating that signature bruschetta taste.
  4. Add the hot, drained pasta to the bruschetta mixture. Toss everything together, adding a splash of the reserved pasta water to help create a light sauce that clings to the pasta.
  5. Sprinkle with Parmesan cheese and optional pine nuts or red pepper flakes. Serve immediately while the pasta is still warm.

Notes

Use ripe tomatoes for best results, reserve pasta water for sauce, prepare bruschetta topping up to 2 hours ahead (add basil last), can add protein like chicken or shrimp
