  • 8 slices of white or whole wheat bread
  • 1 large cucumber, thinly sliced
  • 8 oz cream cheese, softened
  • 2 tbsp fresh dill, finely chopped
  • 1 tbsp fresh chives, finely chopped
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • Butter, for spreading (optional)

  1. In a small bowl, combine the softened cream cheese, chopped dill, chives, lemon juice, salt, and pepper. Mix until smooth and well combined.
  2. Using a sharp knife or a mandoline, thinly slice the cucumber. Pat the slices dry with a paper towel to remove excess moisture.
  3. Lay out the slices of bread on a clean surface. If desired, lightly butter each slice. Spread a generous layer of the herb cream cheese mixture onto each slice of bread. Arrange the cucumber slices evenly over the cream cheese on half of the bread slices. Top with the remaining slices of bread to form sandwiches.
  4. Using a sharp knife, carefully trim the crusts off the sandwiches for a polished look. Cut each sandwich into quarters or halves, depending on your preference. Arrange them on a serving platter and garnish with additional fresh dill or chives.

Notes

Choose soft, fresh bread and assemble sandwiches just before serving to prevent sogginess. For a variation, add thinly sliced radishes or avocado.
