  • 1 large cucumber, thinly sliced
  • 8 oz (225g) cream cheese, softened
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon fresh chives, finely chopped
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • 1 tablespoon unsalted butter, softened (optional)

  1. In a mixing bowl, combine the softened cream cheese, chopped dill, chives, lemon juice, salt, and pepper. Mix until smooth and well combined.
  2. Using a sharp knife or a mandoline, thinly slice the cucumber. Pat the slices dry with a paper towel to remove excess moisture if desired.
  3. Lay out the slices of bread on a clean surface. Lightly butter one side of each slice if desired. Spread a generous layer of the herbed cream cheese mixture onto the unbuttered side of each slice. Arrange the cucumber slices evenly over the cream cheese on half of the bread slices. Top with the remaining slices of bread, cream cheese side down.
  4. Using a sharp knife, carefully trim the crusts off the sandwiches. Cut each sandwich into quarters or smaller triangles for bite-sized tea sandwiches. Arrange them on a platter and serve immediately.

Notes

Choose soft white bread for a traditional tea sandwich or whole wheat for a healthier option. To prevent sogginess, assemble the sandwiches just before serving. For extra flavor, consider adding thinly sliced radishes or a sprinkle of smoked paprika to the cream cheese spread.
