  • 1 large cucumber, thinly sliced
  • 8 oz cream cheese, softened
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 2 tablespoons butter, softened (optional)

  1. Start by trimming the crusts off the bread slices for a more elegant look. If desired, lightly butter the bread slices to add extra flavor and prevent sogginess.
  2. In a bowl, mix the softened cream cheese, chopped dill, lemon juice, salt, and pepper until smooth and well combined.
  3. Spread a generous layer of the cream cheese mixture onto each slice of bread. Place thinly sliced cucumbers on top of the cream cheese on half of the bread slices. Top with the remaining bread slices to form sandwiches.
  4. Cut each sandwich into quarters or smaller triangles for a dainty presentation. Arrange them on a platter and garnish with additional fresh dill if desired. Serve immediately or chill for 30 minutes to let the flavors meld together.

Notes

Choose English cucumbers for fewer seeds and milder flavor. Pat cucumber slices dry to prevent sogginess. Can be prepared up to 2 hours in advance and stored in the refrigerator covered with a damp cloth.
