Ingredients

Ingredients
  • 12 oz salmon fillet, skin removed, cut into 1-inch pieces
  • 8 oz linguine or fettuccine pasta
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 cup heavy cream
  • 1 cup chicken or vegetable broth
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried dill or 1 tablespoon fresh dill
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • Fresh parsley for garnish
  • Juice of 1/2 lemon

Method

Instructions
  1. Prep your ingredients by cutting the salmon into bite-sized pieces and seasoning with salt, pepper, and paprika. Chop your onion and mince the garlic.
  2. Heat olive oil in a large skillet over medium-high heat. Add the salmon pieces and cook for 2-3 minutes per side until golden but not cooked through. Remove the salmon and set aside.
  3. In the same skillet, add the chopped onion and cook until softened, about 3 minutes. Add the minced garlic and cook for another minute until fragrant.
  4. Break the pasta in half and add it to the skillet along with the broth and cream. Bring to a simmer, then reduce heat to medium-low. Cover and cook for 10-12 minutes, stirring occasionally, until pasta is al dente.
  5. Return the salmon to the skillet along with Parmesan cheese and dill. Stir gently to combine and cook for another 2-3 minutes until the salmon is cooked through and the sauce has thickened. Stir in lemon juice and adjust seasoning.
  6. Garnish with fresh parsley and additional Parmesan cheese if desired. Serve immediately while hot.

Notes

Don't overcook the salmon - add it back to the skillet at the end to keep it tender. Use fresh pasta for better texture and faster cooking. Adjust liquid as needed since different pasta types absorb liquid differently.
