  • 8 boneless, skinless chicken thighs
  • 1.5 lbs baby potatoes, halved
  • 3 large carrots, peeled and chopped into 1-inch pieces
  • 1 onion, sliced
  • 8 cloves garlic, minced
  • 1/2 cup unsalted butter, melted
  • 2 tsp Italian seasoning
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1 tsp salt
  • 1 cup chicken broth
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp cornstarch (optional, for thickening)

  1. Prepare the vegetables by washing and cutting the potatoes, carrots, and onion. Place them in the bottom of your slow cooker.
  2. In a small bowl, mix together the melted butter, minced garlic, Italian seasoning, smoked paprika, salt, and pepper. This will be your flavorful garlic butter sauce.
  3. Arrange the chicken thighs over the vegetables in the slow cooker. Pour the garlic butter mixture evenly over the chicken, making sure each piece is well coated.
  4. Pour the chicken broth around the edges of the slow cooker (not directly over the chicken to keep the seasoning intact).
  5. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours. The chicken should be tender and easily shredded with a fork.
  6. Optional thickening step: If you prefer a thicker sauce, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water. Stir this mixture into the slow cooker juices during the last 30 minutes of cooking.
  7. Garnish with fresh parsley before serving. Serve hot with crusty bread to soak up the delicious garlic butter sauce.

Notes

Choose bone-in chicken thighs for more flavor, don't overcrowd slow cooker, add other root vegetables or green beans/peas during last 30 minutes, can make creamy with heavy cream or coconut milk, stores well for up to 4 days.
