- Prepare the vegetables by washing and cutting the potatoes, carrots, and onion. Place them in the bottom of your slow cooker.
- In a small bowl, mix together the melted butter, minced garlic, Italian seasoning, smoked paprika, salt, and pepper. This will be your flavorful garlic butter sauce.
- Arrange the chicken thighs over the vegetables in the slow cooker. Pour the garlic butter mixture evenly over the chicken, making sure each piece is well coated.
- Pour the chicken broth around the edges of the slow cooker (not directly over the chicken to keep the seasoning intact).
- Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours. The chicken should be tender and easily shredded with a fork.
- Optional thickening step: If you prefer a thicker sauce, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water. Stir this mixture into the slow cooker juices during the last 30 minutes of cooking.
- Garnish with fresh parsley before serving. Serve hot with crusty bread to soak up the delicious garlic butter sauce.
Notes
Choose bone-in chicken thighs for more flavor, don't overcrowd slow cooker, add other root vegetables or green beans/peas during last 30 minutes, can make creamy with heavy cream or coconut milk, stores well for up to 4 days.
