- Prepare the dough by combining water, butter, sugar, and salt in a medium saucepan. Bring to a boil, then reduce heat and add flour all at once, stirring vigorously until mixture forms a smooth ball that pulls away from the pan sides. Remove from heat and let cool for 5 minutes.
- Add egg and vanilla extract to the slightly cooled dough and mix thoroughly until fully incorporated and the dough becomes smooth and glossy.
- Transfer dough to a piping bag fitted with a star tip and pipe 2-3 inch lengths onto parchment paper, cutting with scissors. Alternatively, roll small portions of dough into bite-sized balls.
- Lightly spray air fryer basket with cooking spray, arrange churro bites in a single layer, and air fry at 375°F (190°C) for 8-10 minutes, flipping halfway through until golden brown and crispy.
- While still warm, roll churro bites in cinnamon sugar mixture until evenly coated and serve immediately with dipping sauce or enjoy plain.
