- Preheat oven to 375°F (190°C). Split English muffins and arrange cut-side up on baking sheet. Lightly toast for 3-4 minutes until slightly crispy.
- Cook turkey bacon or sausage in skillet over medium heat until crispy. Remove and set aside. Sauté diced bell peppers and onions in same skillet until softened, about 3-4 minutes.
- Remove toasted English muffins from oven. Crack one egg onto each muffin half, keeping yolk intact if desired. Sprinkle with salt and pepper, then add cooked toppings, vegetables, and cheeses.
- Return baking sheet to oven and bake for 8-10 minutes, until egg whites are set and cheese is melted and bubbly.
- Remove from oven and let cool for 1-2 minutes. Garnish with fresh basil or parsley and serve immediately.
Notes
Choose sturdy English muffins to prevent sogginess. For easier assembly, scramble eggs first. Can be made in toaster oven or air fryer (6-8 minutes at 375°F). Meal prep friendly - assemble night before and refrigerate.
