  • 1 pound breakfast sausage
  • 1 cup milk or cream
  • 1 cup shredded cheddar cheese
  • Optional: sautéed onions, bell peppers, or spinach

Equipment

  • Baking dish
  • skillet
  • mixing bowl
  • Whisk

Method

Instructions
  1. Brown the sausage in a skillet to develop flavor
  2. Thoroughly whisk eggs and dairy component (milk/cream) in a bowl
  3. Combine browned sausage with egg mixture in a baking dish
  4. Add shredded cheese and optional vegetables to the mixture
  5. Let assembled casserole rest in refrigerator overnight for flavors to meld
  6. Bake at 350°F until golden-brown top with slightly jiggly center
  7. Remove from oven and allow carryover cooking to finish setting the center

Notes

Season egg mixture adequately but slightly less than you think necessary as flavors will intensify overnight. Avoid overmixing eggs to prevent rubbery texture. For lean sausages, add additional oil or butter to prevent drying out.
