  1. Preheat oven to 400°F (200°C). Wash potatoes and cut into evenly sized pieces. Pat chicken breasts dry with paper towels.
  2. In a shallow bowl, combine grated parmesan cheese, breadcrumbs, minced garlic, Italian seasoning, paprika, salt, and pepper. Mix thoroughly.
  3. Drizzle chicken breasts with 1 tablespoon olive oil, then press each piece firmly into the parmesan mixture to coat both sides evenly. Place coated chicken in center of baking sheet.
  4. Toss potatoes with remaining tablespoon of olive oil and any leftover parmesan mixture. Arrange potatoes around chicken on baking sheet in single layer.
  5. Bake for 25-30 minutes until chicken reaches 165°F internal temperature and potatoes are tender and golden brown. Optional: broil last 2-3 minutes for extra crispiness.
  6. Remove from oven and let chicken rest 5 minutes. Garnish with fresh parsley and serve with lemon wedges.
