- Preheat oven to 400°F (200°C). Wash potatoes and cut into evenly sized pieces. Pat chicken breasts dry with paper towels.
- In a shallow bowl, combine grated parmesan cheese, breadcrumbs, minced garlic, Italian seasoning, paprika, salt, and pepper. Mix thoroughly.
- Drizzle chicken breasts with 1 tablespoon olive oil, then press each piece firmly into the parmesan mixture to coat both sides evenly. Place coated chicken in center of baking sheet.
- Toss potatoes with remaining tablespoon of olive oil and any leftover parmesan mixture. Arrange potatoes around chicken on baking sheet in single layer.
- Bake for 25-30 minutes until chicken reaches 165°F internal temperature and potatoes are tender and golden brown. Optional: broil last 2-3 minutes for extra crispiness.
- Remove from oven and let chicken rest 5 minutes. Garnish with fresh parsley and serve with lemon wedges.
Notes
For even cooking, ensure chicken breasts are similar size/thickness. Don't overcrowd pan for crispy potatoes. Add whole garlic cloves for extra flavor. Can substitute chicken thighs or add vegetables like broccoli in last 15 minutes.
