- Prepare the vegetables by finely shredding the cabbage using a sharp knife or mandoline slicer. Combine the shredded cabbage with grated carrots and thinly sliced red onion in a large mixing bowl.
- Make the creamy dressing by whisking together mayonnaise, sour cream, apple cider vinegar, Dijon mustard, honey, and celery seed in a separate bowl until smooth.
- Combine and chill by pouring the dressing over the cabbage mixture and tossing thoroughly to coat. Season with salt and pepper, then refrigerate for at least 30 minutes.
- Add final touches by stirring in fresh chopped parsley before serving. Taste and adjust seasoning if needed.
