  1. Prepare the vegetables by finely shredding the cabbage using a sharp knife or mandoline slicer. Combine the shredded cabbage with grated carrots and thinly sliced red onion in a large mixing bowl.
  2. Make the creamy dressing by whisking together mayonnaise, sour cream, apple cider vinegar, Dijon mustard, honey, and celery seed in a separate bowl until smooth.
  3. Combine and chill by pouring the dressing over the cabbage mixture and tossing thoroughly to coat. Season with salt and pepper, then refrigerate for at least 30 minutes.
  4. Add final touches by stirring in fresh chopped parsley before serving. Taste and adjust seasoning if needed.
