  • 4 ounces ranch dressing (1/2 cup)
  • 1/2 cup dairy-free parmesan (divided)
  • 1/4 bunch fresh parsley (chopped, about 1/4 cup finely chopped)
  • 2 tablespoons fresh minced garlic
  • 1 tablespoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Instructions
  1. Trim and chop your boneless skinless chicken breast into bite-sized chunks.
  2. Toss chicken with ranch dressing, 1/4 cup parmesan, minced garlic, garlic powder, salt, and pepper. Let it marinate for at least 30 minutes, up to overnight.
  3. Thread the seasoned chicken onto skewers.
  4. GRILL - Heat the grill to medium heat, around 350 degrees. Brush grates with olive oil. Place kabobs on the grill and grill for 5 minutes. Flip, and cook 4-5 minutes more or until chicken is browned and reaches internal temperature of 165°F.
  5. OVEN - Preheat oven to Broil. Place skewers on a baking sheet lined with parchment. Broil for 5 minutes, flip, and then broil for an additional 5 minutes or until golden brown and cooked through.
  6. AIR FRYER - Cook at 425°F for 12 minutes, flipping halfway through.
  7. Once cooked, sprinkle with additional parmesan cheese and salt to taste.

Notes

Marinate chicken for at least 30 minutes (overnight for best flavor). Cut chicken pieces uniformly for even cooking. Soak wooden skewers in water for 30 minutes if using to prevent burning. Use a meat thermometer to ensure chicken reaches 165°F internally.
