- Preheat oven to 350°F. Grease a 9x13 inch baking dish with butter or cooking spray.
- Arrange frozen hash brown patties in a single layer in the prepared baking dish.
- Sprinkle both cheeses, diced ham, and scallions evenly over the hash browns.
- In a large bowl, whisk together eggs, milk, salt, dry mustard, and garlic powder until well combined.
- Pour the egg mixture evenly over everything in the baking dish.
- Cover with foil and bake for 25 minutes. Remove foil and bake for another 20 minutes or until edges are golden brown and a knife inserted in center comes out clean.
- Let casserole rest for 5-10 minutes before cutting into portions and serving.
Notes
Can be assembled the night before and refrigerated - add 5-10 minutes to baking time. For vegetarian version, omit ham and add bell peppers or mushrooms. Try different cheese combinations or add hot sauce for variation.
