- In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat and set the beef aside.
- In the same skillet, add the chopped onion and garlic. Sauté until softened, about 3-4 minutes. Add the diced potatoes and cook for another 5 minutes, stirring occasionally.
- Return the ground beef to the skillet. Stir in the mixed vegetables, beef broth, tomato paste, thyme, rosemary, salt, and pepper. Simmer for 10-12 minutes, or until the potatoes are tender and the mixture has thickened.
- Preheat your oven to 375°F (190°C). Transfer the beef and potato mixture to a pie dish. Roll out the puff pastry and place it over the filling, trimming any excess dough. Brush the pastry with the beaten egg for a golden finish.
- Bake for 20-25 minutes, or until the pastry is golden brown and flaky. Let the pie cool for a few minutes before serving.
