- Prepare your ingredients by patting chicken breasts dry with paper towels, dicing the onion, and mincing the garlic
- Set Instant Pot to sauté mode, add olive oil, and cook diced onion for 2-3 minutes until translucent. Add minced garlic and cook for another minute until fragrant
- Push aromatics to one side, add chicken breasts to the pot, season with half the salt and pepper, and brown for 2-3 minutes per side
- Spread rice evenly around chicken breasts, pour in chicken broth, sprinkle remaining seasonings (paprika, thyme, salt, pepper) over everything, and gently stir to distribute rice
- Seal Instant Pot and set to high pressure for 8 minutes, allowing it to come to pressure (about 10 minutes)
- Allow for 10-minute natural pressure release, then quick release any remaining pressure
Notes
Rinse rice under cold water for fluffier results. Use similarly-sized chicken breasts for even cooking. Don't over-stir during cooking to prevent gummy rice. For brown rice, increase cooking time to 22-25 minutes.
