  • 1.5 cups long-grain white rice
  • 2 cups chicken broth
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

  1. Prepare your ingredients by patting chicken breasts dry with paper towels, dicing the onion, and mincing the garlic
  2. Set Instant Pot to sauté mode, add olive oil, and cook diced onion for 2-3 minutes until translucent. Add minced garlic and cook for another minute until fragrant
  3. Push aromatics to one side, add chicken breasts to the pot, season with half the salt and pepper, and brown for 2-3 minutes per side
  4. Spread rice evenly around chicken breasts, pour in chicken broth, sprinkle remaining seasonings (paprika, thyme, salt, pepper) over everything, and gently stir to distribute rice
  5. Seal Instant Pot and set to high pressure for 8 minutes, allowing it to come to pressure (about 10 minutes)
  6. Allow for 10-minute natural pressure release, then quick release any remaining pressure

Notes

Rinse rice under cold water for fluffier results. Use similarly-sized chicken breasts for even cooking. Don't over-stir during cooking to prevent gummy rice. For brown rice, increase cooking time to 22-25 minutes.
