  • 1 teaspoon paprika

  • 1 onion, sliced
  • 1 bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes
  • Fresh herbs (thyme or parsley)

  1. Prepare the chicken by slicing each breast horizontally into thinner cutlets. This ensures quicker, more even cooking.
  2. Season both sides of the chicken with garlic powder, paprika, salt, and pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 4-5 minutes per side until golden brown and cooked through.
  4. Remove chicken from skillet and set aside. In the same pan, add onions and bell peppers, cooking until softened (about 5 minutes).
  5. Add garlic and cherry tomatoes, cooking for another 2 minutes until tomatoes begin to burst.
  6. Return chicken to the skillet, spooning the vegetable mixture over the top. Garnish with fresh herbs and serve immediately.

Notes

Pound chicken breasts to consistent thickness for even cooking. Don't overcook - use a meat thermometer to reach 165°F internal temperature. Even 15 minutes of marinating in olive oil, lemon juice, and herbs improves flavor and tenderness.
